Chick peas are a great source of proteins as it belongs to the legumes family, It is also known as chole or kabuli chana in local language.

They are generally light cream to brownish white in colour. It can be used as sprouts, salads, flour when grinded, varieties of soup & different masala for various ingredients.

Here, I am going to prepare an easy and healthy option of pea as a salad which will give you a nutrition value as well as a good source of protein so can be taken by any age group people with a healthy diet. According to many researchers & sources it is believed to be consumed in morning but can be taken in noon or evening according to the preference.


Preparation time = 5-10 mins
Cooking/ Boiling time = 10-20 mins





Ingredients

1) 250 gms of chickpea soaked overnight or 8-10hours after washing 3-4 times with normal water.
• TIP- one can soak them in warm water for 2-3hours if guests and menu are a surprise.
• With lukewarm water in winters can beused as a sprouts.

2) 1-2 – Chopped onions
3) 1-2 – Chopped tomatoes
4) 1- Chopped cucumber
5) Any other veggies of choice like broccoli, mushroom, cabbage, lettuce, carrot, capsicum etc. can be used.
6) Salt to taste
7) 1-1.5 tsp. -rock salt
8) 1 tsp.- black pepper
9) 1 tbsp – Lemon juice or 1 whole lemon
10) Coriender to Garnish





Method

1) Boil the overnight soaked chickpeas in a pressure cooker with the same water used to soak on a high flame for 10-15minutes and then low the flame for another 5minutes.
2) Once boiled strain the chickpea of all the water. After that keep the strainer aside.
3) Other way around while during boiling the chickpeas one can use the time and chop the desired vegetables of choice in to dice or cube form and for garnishing grate the veggies.
4) Once both veggies and chick pea are ready mix well all the ingredients starting from salt to lemon.
5) Taste and do the necessary changes if required.
6) Garnish well with coriander and beetroot or carrot grating.
